Lovage using in the kitchen

Lovage is a well-known herb in the kitchen. Both its root, stem, leaf and seeds can be used. Fresh leaves give a spicy flavour to soup, sauce, scrambled eggs, spinach, carrots and potatoes. Also finely shredded, it gives salads a fine aromatic and spicy flavour. Lovage can also be used as a seasoning for beef and lamb. The leaves can be cooked along with the meat without losing flavour. Because of its strong flavour, lovage should be used in moderation.

Lovage is a salt substitute in dishes and therefore the solution for people who follow a salt-free diet. In addition, lovage can help relieve other complaints. It is all in the name, Levare, which is derived from the genus name Levisticum, freely translates to relieve.

Sowing instructions

Lovage prefers to grow in both sunny and semi-shaded places. The soil must be rich in humus and, above all, permeable. It is best to transplant the plant every eight years. 
Because of its height, it is advisable to plant it at the back of the (herb) garden. The best time for sowing is in spring (March-April) in a greenhouse or outside in a sheltered place. Always make sure that the sowing soil remains moist during germination. This can be done by covering it with perforated plastic film or glass until the seeds have germinated, which can take three weeks. Those without a garden can grow lovage in a pot on the patio or balcony. However, make sure the pot is wide enough (about 24 diameter). Although the plant will not grow as tall as in the open ground, the flavour is similar. Lovage can be propagated by either sowing or splitting the plant. The plant suffers little from diseases or insects.
