Sorrel in the kitchen

Sorrel is an excellent kitchen herb. Fresh, young leaves can be used in sauces, soups, cream cheese and egg dishes. When used in a dressing for salads, for example, less vinegar or lemon juice needs to be used. After all, sorrel leaves are already sour enough. Sorrel combines excellently with chicken and pork. It can also be eaten as a vegetable. To do this, boil the leaves just like spinach, but pour the water off once and top up with clean water. This is to temper the sour taste.

Health and sorrel

Sorrel contains, among other things, a lot of vitamin C. Sorrel is said to have medicinal properties. It is said to purify blood and have a positive effect on bladder function. Furthermore, it promotes the production of red blood cells. Skin conditions, such as acne, are also believed to be treatable by making a poultice of the herb.

As sorrel contains a rather high level of oxalic acid, it is advised not to eat too much of it or too often.

Sowing instructions

Sorrel grows best in acidic, moist soil and full sun or semi-shade spot.  Keep a planting distance of 30 cm. The herb self-seeds easily because it forms seeds quickly. To prevent this, it is important to remove the flowers in time. An additional advantage is that all the plant's energy is focused on producing leaves. In hot summers, sorrel will produce increasingly more bitter leaves. Once it is no longer hot outside, the flavour of the crop will quickly improve again.
