An artichoke of artichoke seeds becomes a thistle with flowers in heads and pointed winding leaves. It shows the peculiar phenomenon of irritable stamens: when in contact with e. g. a bee tongue or leg, the helms come together and a pinch of white pollen is released from the anthers.
Artichoke as a vegetable
The fleshy bracts of the closed flower bud are eaten as vegetables. For this cultivation spiny plants are used, which are vegetatively propagated. After harvesting, the flower stem is cut out of the plant. The plants have to be kept frost-free during the winter by covering them with straw and plastic.
