Organic:
Gently clean the mushroom with a small brush or a damp piece of kitchen roll. Cut off the lower part of the stem and slice the mushroom or cut it into quarters. Do not clean mushrooms under running water or by leaving them to soak in water. They will absorb water, which will clearly result in a loss of flavour.
